The Executive Chef at Grantley Hall is world renown Shaun Rankin, originally from Yorkshire, and has gained three Michelin stars in his career thus far. He trained at The Mayfair Hotel in London, and then opened Ormer restaurant in Jersey and later in Mayfair London. Shaun Rankin has made numerous TV appearances including 2017 MasterChef, when Ormer Mayfair featured on the programme. Shaun Rankin at Grantley Hall was awared a Michelin Star in February 2020.
Choosing Precision Refrigeration
Shaun Rankin at Grantley Hall is an exceptional restaurant which serves locally grown and sourced food, taking full advantage from the fresh ingredients grown in the Kitchen Garden on site. It serves organic meat from nearby farms, speciality cheese from across the county, and fresh seafood from the nearby Yorkshire coast.
Rankin chose Precision Refrigeration products for Grantley Hall, as it wanted a British manufacturer that had a flexible range that would suit the team’s requirements for both their kitchens and bars. Rankin designed all of these areas at Grantley Hall, knowing exactly what the team would want on site, and what equipment he was looking for.
A series of counter drawer and door units were installed in the kitchens to serve the busy chefs, so all the ingredients are easily accessible. Counter refrigeration was particularly useful to accommodate the needs of the various food sections. No matter if the chef is making pastry or sauces, they have exactly what they need, where they need it.
Rankin particularly likes the Precision blast chillers. “They have a series of modes on them to blast chill, soft chill, hard chill and blast freeze food, which is perfect for parfaits” comments Rankin. “Precision offers blast chillers that fit under the counter, as well as upright units, which was perfect for the space we had, and where we needed the equipment.”
Another piece of equipment Rankin enjoys using is the Precision meat ageing cabinet, which the team hangs salamis in, stores meat, or dries ducks. “Game season in Yorkshire is big” comments Rankin. “Partridge, grouse and duck are popular choices on the menus, so the Precision meat ageing cabinet is perfect for Grantley Hall.”
